Empanadas
One of my favorite foods here in Argentina is empanadas. They are a pastry type dough filled with various mixtures. The most common fillings I've seen are chicken, beef or ham and cheese. My favorite is chicken. On Friday night, I learned how to make empanadas! A couple friends came over to my apartment and we made chicken empanadas and beef empanadas. We bought the tapas (pastry dough) at the supermarket, made the filling, stuffed the tapas, and baked them. We started making the empanadas around 10:00pm and the first batch was finally ready a little before midnight. Part of why it took so long is because my kitchen it very small and I only have 1 pot, 1 frying pan, and 1 baking pan. So we couldn't cook everything for the filling all at once. It was a fun process though!
Many cafés and restaurants have a large variety of empanadas to choose from, including desert empandas. This picture is of Xiomara and me making empanadas on Friday.

Haha! I agree with your Mom :) I also saw them make those on HGTV one day...they really did look yummy. I also heard that empanadas that they have in Mexico are quite different than what you are having. I think they might be more dessert like...I'm not sure. The lady my mom works with "Erica" (from Mexico) was talking about it.

I agree, too! These are more of something he would actually choose to eat! Haha.
Some people fry empanadas instead of baking them, which gives them a very different taste.
